CS Cabernet (Aka Substance) - A Party Favorite I Brought Home
Meet Substance
I first tried Substance Cabernet Sauvignon at a very high end party in Fort Worth (it was technically a “ball” if we want to get into specifics). Being someone who loves a good wine, I went to the bar with my fiance and asked him to guess how much the cab they were serving cost. We both sipped our glasses, placed our bets, and… were both completely and entirely wrong. This was a $15 bottle being served at a black tie affair – how awesome is that?

Taste
This particular year of cabernet has won two critic reviews (click here to see on the Substance website) with scores over 90. The flavor is intense and strong. Right when you sip the fruit taste fills your whole mouth. At the forefront, I taste dense raspberry and strong, but not smokey, tannins.
Aftertaste
CS has a long lived aftertaste, which is probably why the party I mentioned earlier chose to serve it. I personally taste tobacco and a hint of a blueberry in the afterthought. Though this sounds like an interesting combination, CS pulls it off completely.
Scent
I like that the scent of this cabernet is lighter and fruiter than most, though this isn’t reflected in the flavor. When I smell, dark cherry is the first fruit to present itself. This wine is one of the ones I like to swirl around in the glass for a little while before I start sipping, just enjoying the aroma.
Pairings and Other Info
Substance’s CS Cabernet would pair best with a dark meat, such as bison or a steak. If you are a pescitarian, I honestly think it would taste great with a salmon or a halbet – something a little bit more rich. Vegetarian? Pair with something that has a lot of butter.
